The Effects of Genetic Groups, Nutrition, Finishing Systems and Gender of Brazilian Cattle on Carcass Characteristics and Beef Composition and Appearance: A Review
نویسندگان
چکیده
The aim of this review is to address some characteristics that influence meat quality. Genetic groups, nutrition, finishing systems and gender are the major factors that change carcass characteristics, chemical composition and fatty acid profile. Genetic groups that have zebu genes in their composition show higher hot carcass dressing than genetic groups without zebu genes. Genetic groups that have European breeds in their composition have higher marbling scores. On the other hand, genetic groups that have zebu breeds show low marbling scores. Bulls finished in feedlots present higher final weight than steers, cull cows and heifers. Fat thickness is one of the principal parameters that are affected by different gender. Cull cows (4.72 mm) and heifers (4.00 mm) present higher values than bulls (1.75 mm) and steers (2.81 mm). The major effects observed by different systems of termination are fat thickness and marbling. Crude protein presents variation due to nutrition. Nutrition influences variation of fatty acid profile. Genetic groups also influence fatty acid profile. Genetic groups that have zebu genes in their composition show high percentage of PUFA. The major class of fatty acids that is changed with nutrition is PUFA. The better ratios of PUFA/SFA and n-6/n-3 are found in Longissimus muscle of animals finished in pasture systems. (

The Effects of Different Levels of Saturated and Unsaturated Fats and Their Composition in Growing and Finishing Periods on Productive Performance and Blood Lipids of Broilers
This experiment was conducted to investigate the effects of different levels of saturated and unsaturated fats and their composition in growing and finishing periods on performance, carcass traits and blood lipids level in broiler chickens. In this experiment, 432 Ross 308 broilers were used from 11 up to 42 days in 9 treatments, 4 replicates and 12 birds in each replicate in growing (11-24 day...
متن کاملInteractions of the Factors Affecting Cattle Grade/Performance
Because economic value of carcasses is dependent primarily on carcass weight and carcass quality, feedlot managers have an interest in factors associated with maximizing these two variables. The NRC (1996) proposes that body composition (fat and protein) and carcass characteristics of beef cattle at a specified percentage of mature body weight (BW) are fixed, which indicates that maturity, rath...
متن کاملColour of bovine subcutaneous adipose tissue: A review of contributory factors, associations with carcass and meat quality and its potential utility in authentication of dietary history.
The colour of bovine subcutaneous (sc) adipose tissue (carcass fat) depends on the age, gender and breed of cattle. Diet is the most important extrinsic factor but its influence depends on the duration of feeding. Cattle produced under extensive grass-based production systems generally have carcass fat which is more yellow than their intensively-reared, concentrate-fed counterparts and this is ...
متن کاملEffects of Franklin Feed-Grade Limestone vs. Aerion Industries Nutrion Limestone on performance and carcass characteristics of finishing beef steers
Because grains comprise the major portion of diets for finishing beef cattle, and grains contain little calcium, limestone is typically added to finishing diets at levels of .7 to more than 1% of the dry matter. Feedgrade limestone varies in quality and consistency, which could alter performance responses by finishing beef steers. Selection of superior sources of limestone and(or) treatment of ...
متن کاملEffects of Programmed Feeding to a Constant Average Daily Gain vs. Ad Libitum Feed Intake on Performance and Carcass Characteristics of Finishing Beef Steers
Thirty-two Angus steers were used in a 140d feeding trial to examine the effects of ad libitum feed intake or a programmed rate of gain on feedlot performance and carcass characteristics. Ad libitum-fed steers had greater (P < .06) DMI, ADG, and feed efficiency from d 0 to 28, 0 to 56, and 0 to 84 than programmed-fed steers; however, no differences in ADG, DMI, or feed efficiency were detected ...
